Kinda Healthy Choc Chip Cookies
These cookies are crunchy and filling with lend oats. They do contain a little carbohydrate and the choc chips are optional if you like. I think they are a great process for your kid ’ second lunchboxes or an after educate bite on their way to sports. Just memory in the deep-freeze as a ready to grab bite !

These cookies came about after chatting on the call to my acquaintance, she was telling me the drama of trying to bake her lunchbox muffins with a break oven. She forgot until right as she was about to put the muffins in. so ended up walking her muffin mix in her Thermomix with two kids in toe, a few houses down to borrow a neighbor ’ s oven. Whilst listening to this very give narrative I thought to myself I should very be baking some lunchbox treats myself .
My kids are not in truth into muffins or baked goods so I thought I would try cookies alternatively. After a few trials, these crunchy, chocolate topped cookies were the winner ! My kids however, just ate the chocolate off the exceed, as it turns out they aren ’ deoxythymidine monophosphate into cookies either. But I think they taste big and will be a great addition to most kids lunchboxes. Try them out and see !

Ingredients
- 1/2 cup coconut oil
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 egg
- 1 cup plain flour
- 1/2 tsp baking powder
- 1 cup
oats
- 1/2 cup choc chips (white, milk or dark)
Instructions
THERMOMIX METHOD
Pre heat oven to 160°C ( winnow forced )
seat coconut oil, boodle and vanilla into TM mixing bowl and whisk 20 sec / speed 6. ( you may need to melt the coconut oil slenderly first )
Add the testis and whisk 20 securities and exchange commission / speed 3 .
sieve in the flour and baking powder, combine 5 secant / accelerate 4, scrape down sides and repeat .
Add oats and half the choc chips and mix REVERSE / 10 secant / speed 3 .
Spoon teaspoon sized balls of dough onto a line broil tray, about 5cm apart, flatten slenderly and top with remaining choc chips .
Bake 15 minutes until lightly gold. Allow to cool on tray for a few minutes before transferring to a wire rack .
NON THERMOMIX METHOD
Pre heat oven to 160°C ( fan forced )
In a bowl whisk together the coconut petroleum, brown university sugar and vanilla distill until smooth. ( you may need to melt the coconut oil slenderly beginning )
Add the egg and whisk until well combined .
sift in the flour and baking powder, add the oats and half the choc chips and stir until just combined .
Spoon teaspoon sized balls of boodle onto a lined baking tray, about 5cm aside, flatten slenderly and top with remaining choc chips .
Bake 15 minutes until lightly golden. Allow to cool on tray for a few minutes before transferring to a wire wrack .
Notes
